The Portal Fernández Concha, on the southern sidewalk of the Plaza de Armas in Santiago, is the pioneer in the history of the “Chilean Completo”, the El Portal Ex Bahamondes restaurant.
It was in 1930 when the first owner, mister Eduardo Bahamondes Muñoz, traveled to the United States, where he met and brought with him the idea of the classic hot dog.
When the founder died, the business was transformed into a cooperative. However, they could not keep the business and had to put it up for sale, being acquired by an Italian family residing in Chile, headed by Jose Devillaine, who were already in the restaurant business, although more traditional and “fine.”
The completo variety called “Italiano” was born by adding avocado, tomato and mayonnaise, which gave rise to the mythical Chilean Italiano, a creation of this place, linked to the Devillaine family.
Currently, the establishment maintains the tradition intact, in ingredients and recipes, to which are added details that make this national gastronomic emblem unique. For example, the bread is made in-house, which guarantees its freshness; the sausage is made with a unique recipe; and the characteristic potato mayonnaise is presented as an alternative to traditional homemade mayonnaise.
Another of its specialties are pizzas, such as the renowned Completa en Churrasco and the unmissable Sandwiches, in their Chacarero, Lomitos and Gordas varieties.
